Method
8 clear steps
- 1
Cut the onion into wedges and the scallion into 0.5 cm pieces. Toast the 5 g sesame seeds in a dry pan, shaking it, until lightly golden.
- 2
Blanch the beef in boiling water for 1 minute and lift it out.
- 3
Mix 40 g mirin (or 30 g cooking wine), 30 g soy sauce, 20 g oyster sauce, 5 g sugar and, if you like, 5 g dark soy sauce in a bowl for the seasoning.
- 4
Heat a little oil in a pan and stir-fry the onion quickly until translucent.
- 5
Turn to low heat, add 250 g water (or dashi), turn back to high heat and wait 3 minutes.
- 6
Add the beef and the seasoning and stir constantly for 10 minutes so nothing sticks. Check that the beef is cooked through (63°C), then turn off the heat.
- 7
Put the beef and onion over the rice, spooning some of the juices over the rice, and sprinkle with scallion and sesame.
- 8
Refrigerate leftovers promptly. To reheat a portion, microwave on high 2–3 minutes, or warm it in a pan with an extra 50 ml water, stirring constantly.
