Method
4 clear steps
- 1
Blanch the lamb ribs from cold water, skim and drain. Warm oil in a covered pot and gently melt a little sugar without burning. Add ribs and toss, then add ginger, dried chilies, peppercorns, dark soy and salt to taste.
- 2
Add water to cover. Bring to a boil, cook initially for 10 minutes, then simmer for about 30 minutes or longer until tender. Lamb must reach at least 63°C with at least 3 minutes kept hot; replenish liquid if needed.
- 3
Meanwhile mix 300 g flour, 3 g salt and 180 ml water. Knead smooth, rest for 10 minutes, knead again and rest for 5 minutes. Divide into 6–8 pieces, coat lightly with oil, rest for 5 minutes and roll into wide noodle sheets.
- 4
Chop the peppers and scallion and add to the tender ribs. Lay in noodles individually and braise for an initial 4 minutes, keeping sufficient simmering liquid. Continue until each noodle is cooked through, then gently toss and serve.
