Method
4 clear steps
- 1
Marinate (makes 2 glasses): scoop the pulp and juice of 3 passion fruit into a container, add 30 g sugar and 10 g honey (or 5 g more sugar instead of the honey), and stir well. Cover with cling film and refrigerate for 12–24 hours.
- 2
Put 3–6 g jasmine green tea in a container, add 150 ml boiling water, and steep for 6 minutes. Add 90 g ice, stir until it melts, and strain out the leaves to get about 240 ml of tea.
- 3
Cut the orange in half across the middle and cut one thin slice from one half to keep for the glass. Cut the halves again and squeeze the quarters with a juicer.
- 4
Put 70 g ice in the bottom of a clear glass of 350–400 ml and pour in all the orange juice. Press the orange slice against the inside of the glass, spoon one portion (half) of the marinated passion fruit over the ice, and slowly pour in the tea until the glass is full so the layers separate. Add a mint leaf if you like and stir before drinking.
